Red Velvet Cheesecake
I made this for my friend's birthday. He liked red velvet AND cheesecake, so we decided to put the two together. You can do 4 layers (cheesecake, cake, cheesecake, cake) or 3 (cake, cheesecake, cake) depending on how "crazy" you are. The 4 layer seemed to be more manageable actually. I did both, another for a different occasion, and that one ended up sliding around during transport, but it may have been the consistency of the cream cheese frosting. I reserved the leftover cake (shaved off to make even) and crumbled it up on the sides (which also saves time in frosting).

Rocky Night
Friday we had a Rocky night. We made philly cheesesteaks, Kayla made a really good pasta salad, and then followed it up with cheesecake. Gotta love it.

We had about 10 people over for the viewing of Rocky. I'm surprised how many people have never seen it before. Oh well. You've gotta watch Rocky at least once in your life.

Truffles
So I remember back in the day Jenny had found a great recipe for truffles. I thought of making them for Elyse's wedding, but never really got to them. We had a Valentines Day/Chocolate "potluck" if you will at church a few weeks ago so I thought I would give it a whirl. I've now made them 4 times since then
I crushed almonds and coconut (separately)

Added mint extract and then rolled in crushed candy canes

Added peanut butter to the truffle mix and then swirled on some pb as well

Creamy chicken wild rice soup
I made this for Isaac's blessing luncheon. It was really good. A week or so later Kayla asked me to make her some chicken noodle soup because she was sick. I just switched out the rice for the noodles and it turned out just as good. I'm sure I could substitute the cream for broth to make it a little less artery clogging.
A couple fun Saturdays
Two Saturdays ago I went down to watch the BYU game at G&Gs. Afterwards, Katelyn and I went and saw "I am number four". It was really good, so good we decided we needed to read the book. We just had to find it first. We headed to walmart, but they didn't have it. So we went to barnes and noble. I'm about 1/2 through and I gotta say they stick pretty close to the book. After we hung out at B&N we stopped over at Mimi's Cafe for dinner. Katelyn enjoyed a bowl of french onion soup (what crazy college kid likes french onion soup???) and I had the corn chowder. It was an awesome night. I love spending time with Katelyn, she keeps me feeling young.



This last Saturday I got to spend time up with Elyse and Isaac while Brandon was at the 3A Boys Basketball State Championships (GO WASPS!!) Elyse and I had really good Cesar salads and watched the game on TV. Oh and Isaac kept us entertained as well. He is getting SO big!

New Job
So I start my new job on Monday. My official new title will be Education Project Coordinator for the Institute for Healthcare Delivery Research. "The vision of the Institute for Health Care Delivery Research is to improve quality and reduce the cost of health care services by providing technical support and education for clinical research and process management within the Intermountain Healthcare system." We host a number of different conferences throughout the early, for Intermountain employees as well as outside physicians, CEOs, and other executives. I'll be helping coordinate those conferences, register attendees, set-ups, arrange accommodations, prepare conference info, and support the department. I'll also have my own conference that I'll be in charge of that is held at our Dixie Regional Hospital in St. George (I get to go on a business trip). The best part I think is that I'll be working here:

Okay, so I'm a horrible blogger
I just keep on forgetting to post things and then when I remember, it's too late, I'm too tired, or it really doesn't make sense to post it. SO here's are a few things I've been doing. Enjoy.
